Background on the Calissons from Provence :
The Calisson appeared in Aix en Provence during the fifteenth century. Its name comes from the expression “di calin soun”, meaning “they are warm and cuddly”. Calisson are small and diamond shaped.
During the seventeenth century, the citizens of Aix en Provence thought that Calisson had the power to protect against the plague which encouraged people to eat Calissons. Nowadays, Provence is no longer affected by the plague but locals still enjoy consuming Calisson in day to day life.

More information on White Nougat:
Nougat is an internationally known speciality which deserves a gourmet mention. It has been made in Montélimar since the 17th Century . Nougat consists of honey combined with sugar, egg white, vanilla, almond and pistachio nuts which give it such a delightful flavour. The exact recipe is still to this day kept secret.br>
The smooth surface of the Nougat comes from the unleavened bread in which the pastry of the Nougat is mixed after cooking.
The Nougat can be white or black, although white nougat is more popular and widely known. Black Nougat is easier to prepare and was probably even created before white nougat. Like Calisson, Nougat is one of 13 desserts traditionally served in Provence at Christmas time.
